Chef Oli Pagani
With over 15 years of experience in Europe's top kitchens, Oli is a Michelin-trained chef and former development chef for the iconic Ottolenghi group. He now works as a private chef across French chateaux and chalets, known for his deeply flavorful, seasonal cooking and relaxed elegance at the table.
Chef Nicole Pisani
Nicole is a celebrated chef, food educator, and author of Salt, Butter, Bones. Trained in Michelin-starred kitchens, she has led teams at NOPI (Ottolenghi) and The Modern Pantry, and brings over 20 years of creative culinary experience to every plate.
Together, Oli and Nicole create an atmosphere of culinary excellence balanced with approachable warmth and fun. Their complementary styles and shared passion for quality ingredients ensure every guest receives personalised attention and inspiration.

Your 7-Day All-Inclusive Culinary Journey
Our retreat follows a carefully crafted itinerary that balances hands-on cooking, wine exploration, and relaxation.
Day 1: Welcome to Bordeaux
Airport transfer to your luxury villa. Evening welcome reception with Crémant de Bordeaux and canapés.
Day 2: Techniques & Kitchen Fundamentals
Workshops on knife skills and flavour building.
Day 3: Bordeaux Wine Experience
Half-day vineyard tour with private tasting.
Day 4: Market Visit
Morning market visit and cooking with the local produce we have bought. An afternoon relaxing by the pool or exploring Bordeaux.
Day 5: Masterclass and Foraging
Morning masterclasses and afternoon learning how to forage and cook with wild local ingredients.
Day 6: Celebration Feast
We come together to put what we have learnt to the test and cook the evening gourmet feast.
Day 7: Saint-Émilion and Michelin-Starred Experience
Guided Tour around Saint-Émilion. Lunch at renowned Michelin restaurant.
